Once upon the time there was a viper, that never hurt any body. And then there were brigands, harmless and longing to get away with.
The story of the restaurant Vipore of Pieve S. Stefano is between legend and reality.

The building is an old farmhouse of the XVIII century, at the period the way was a secondary route, used to avoid the tolls from the bandits coming from Florence and directed towards the sea, where they arrived after a day on horseback between mountains and inaccessible forests.

The farmhouse'owner was nicknamed Vipore, the vernacular name of viper and, for extension, also to indicate someone bad. Probably he made himself this bad reputation, stressing certain abrupt behaviors, so to discourage the bandits from any assault.
